It Doesn’t Take Brains…to be a boss

Good morning to you all this morning and thanks for dropping in! We hope all are well and you have had a great Fourth of July…God Bless America!

I know I say this frequently, but Deb and I both feel it necessary. Thank you all for your support and prayers in regards to Deb’s condition.

She’s really done well with her first chemo, although towards the end of last week she experienced several days of “feeling nauseated, and confused.” You could tell it had hampered her pretty good, and this was 8-10 days after her treatment.

The White House Rural Council

Good morning my friends! How are you all today? We’d like to thank you for dropping back in to see us again, Ridin’ Out the Recession in ole Miz Judi’s Kitchen.

I sure am glad Miz Judi and Brian don’t work, for or run the Huffington Press. If this were the case, I doubt these last two columns would have seen daylight.

I’d like everybody reading this morning to realize what a job those two, and the Canada free Press are doing for us here in the States. That publication, along with a few others here, are our beacon as to what is actually going on in Washington.

Let’s Talk…Politics??

Good morning guys…how are you? We surely hope all are well and in good spirits today. Thank you again for stopping in.

I received a comment from Tea Patriot the other day on composting. It is as follows:

I’m starting my own gardening too. Unfortunately, composting will probably be taxed or, made illegal; due to the carbon footprint of a natural process. Obama just created a White House Rural Council, to regulate all usage of rural property. So home gardens will soon be outlawed.. GMO’s will also be the only food source soon. I hope you don’t let that happen in Canada. Good luck!

My reply…

Baked Eggs and Salsa (Chili Sauce) Blueberry Muffins

You know today we’ve been kinda just jackin’ around and trying to have a few laughs, so with that being the case, why stop now just cause we’re putting up a couple recipes?

Dale told us that he and Creek Dog stopped at a restaurant coming back from their fishing trip in Georgia. He said that they stopped off of I-75 at a place that looked as if it might be just a bit above what they were actually looking for, something like a Huddle House.

Well, he said they go inside and the first thing they see is everyone is dressed considerably nicer than they were, and in fact several people were looking over at them, being as he and Creek Dog were both in T-shirts, cut off Levis, and flip flops. BUT, their sunglasses were over 150 bucks apiece. Ya just gotta have a good pair of shades!

Anyway, Dale says the waiter came over and asked what they’d like to have? Creek Dog says, “Well, what’s today’s special?”

The waiter replied that the special of the day was broiled calf tongue.

Dale said Creek Dog made this terrible expression and told the waiter, “I ain’t about to eat anything that comes from the MOUTH of a dern animal! How bout just getting me some eggs?”

Baked Eggs and Salsa (Chili Sauce):
This is a recipe that can be eaten as breakfast or supper. Again, once in a while Deb and I both like breakfast…for supper. This is a recipe that can be used for this.

  • 4-eggs
  • 4 tablespoons of salsa (we use chili sauce)
  • 3 tablespoons sour cream
  • ½ cup shredded cheese

Preheat your oven to 350. Combine all ingredients (except cheese) in a bowl and beat well. Then put this in a small buttered baking dish or pan. Cook this for a few minutes until your mixture starts setting up, take out, sprinkle your cheese on top, then place into the oven just long enough to melt your cheese. Take out and serve. This makes two good servings.

I know you guys may have wondered from time to time how Deb and I met. Without going into any long drawn out explanation, I’ll just tell you that when we did finally meet the line I used to capture her heart. For all you younger gents out there remember this, cause once I laid this on ole Deb…she was mine!

Ya got your pencils and pads out?

I said, “Deb, your britches is just like mirrors.” She says, “Why you say that Dub?” I said, “Cause I can see myself in em!”

One more quick one on Deb. We used to call her “Punkin Junction” because she was raised so far out in the woods of North Florida. We’d been dating a while when she came by the house one afternoon.

She came in with a sack under her arm, and I could tell that whatever she had in it, had obviously really excited her!

She came in and told me, “Dub, come in here and look what I found!” I went into the kitchen and could see right off the bat she had a shiny new thermos.
Well, I knew what it was, but with her being so excited I didn’t want to “bust her bubble.” I asked, “Boy that sure is purty and shiny, but what in the world is it?”

She said, just a beaming, “Why Dub, it’s a thermos.”

I then told her that that was really something, and where’d she get it? She said she’d bought it up at the TG&Y, after the sales clerk told her how handy they were!

I asked her, “Well, what’s a dern thermos do?” She immediately replied that a thermos keeps hot things hot, and cold things cold!

I said, “REALLY, what you got in it?”

Her answer…two cups of coffee and a popsickle! If she reads this today, I’m in big trouble!

Blueberry Muffins:
What goes good right behind a supper of breakfast…in my book, Blueberry Muffins!

1-3/4 cups flour
½ cup of sugar
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
4 tablespoons butter
1 egg, beaten
2/3 cup of milk
1 teaspoon vanilla
1 cup blueberries

Preheat your oven to 375.

In a large bowl, mix your flour, sugar, baking powder, salt, cinnamon, and butter.

In a different bowl mix your egg, milk and vanilla, and pour this into your flour mixture. Stir this until all is moistened, then fold in your blueberries.

Grease and fill your muffin pans about ¾ full of your batter. Bake for 20-25 minutes, then insert a knife into your muffins until the knife comes out clean.

A Few Laughs

Good morning guys, and welcome back. Why don’t you come on in this morning and sit a little while?

From Tuesday afternoon until late Wed. afternoon, Deb and I both were sick as dogs. She started first, upset stomach, then to sick on the stomach, and couldn’t stay out of the bathroom. We thought she must finally be having a reaction of some kind to her chemo treatment.

Then, about an hour later I started with the same thing. I know I got up three times Tues. night sick, then Wed. I had two meetings to go to. I went to those, got home and Deb and I both lay down at 2:00, and got up at 5:30 that afternoon…just fell out!

Composting…I’m Impressed!

Good morning and how is everybody today? We hope you all had a great weekend and are getting off to a good start for the week ahead!

You know our garden has come and gone, and it was kinda a rough spring this year in regards to our garden. We just had little to no rain, but it looks as if now we are indeed getting into our normal afternoon rain pattern. It was a long time coming this year for some reason.

I guess since the rains are starting now, we’ll begin prepping our garden for some okra. This is really all we’ll be planting as we’re coming into summer, and this means…HOT!

Needlhams, Fruit Cocktail Cake, Homemade Cracker Jacks

First off, I just want to say that I tried the recipe for the fried bean cakes. These little mother’s were pretty good. I couldn’t even get Deb to try one??

After much, “C’mon Deb, just try one,” she finally responded with a, “Dern Dub, I’ve just had a chemo treatment!” I told her that I surely understood that she had, but it didn’t seem to bother her intake of peas and cream corn in the least!! Women!

The Latest on Deb

Good morning guys, and thanks for coming back by to visit with us today.

Deb received her first chemo treatment yesterday. It lasted 3-1/2 to 4 hours. We thought initially it was going to just be a couple hours, but this wasn’t the case. She went through this very well.

No sickness, thank God, and even this morning she’d had no nausea so far. She looks good, and says she feels good, so boy I’m relieved too!

Messing Around Down At The Pond

Hey guys, and welcome back to Ridin’ Out the Recession, in Miz Judi’s Kitchen.

Dale came down yesterday, this must be Dale week, huh? Anyway, he wanted to cast net a few shiners to fish with down at the creek. I asked him, “Dale, the creek ain’t got any shiners in it?” He said yes, but they’re not as easy to catch as they are outta’ your pond.

Is that supposed to make me feel good or what?

Dale and Creekdog, Huntin and Fishin Buddies

Good morning guys! How is everyone today? We’re glad you dropped back in this morning.
Most of you know that Dale works with us here on the place.

Yesterday Dale came in and was telling Deb and I about his little fishing trip down the creek. I’ve about determined how to tell when Dale might be lying to you, and actually this is done fairly easily…his mouth will be open.
