Baked Eggs and Salsa (Chili Sauce) Blueberry Muffins

You know today we’ve been kinda just jackin’ around and trying to have a few laughs, so with that being the case, why stop now just cause we’re putting up a couple recipes?

Dale told us that he and Creek Dog stopped at a restaurant coming back from their fishing trip in Georgia. He said that they stopped off of I-75 at a place that looked as if it might be just a bit above what they were actually looking for, something like a Huddle House.

Well, he said they go inside and the first thing they see is everyone is dressed considerably nicer than they were, and in fact several people were looking over at them, being as he and Creek Dog were both in T-shirts, cut off Levis, and flip flops. BUT, their sunglasses were over 150 bucks apiece. Ya just gotta have a good pair of shades!

Anyway, Dale says the waiter came over and asked what they’d like to have? Creek Dog says, “Well, what’s today’s special?”

The waiter replied that the special of the day was broiled calf tongue.

Dale said Creek Dog made this terrible expression and told the waiter, “I ain’t about to eat anything that comes from the MOUTH of a dern animal! How bout just getting me some eggs?”

Baked Eggs and Salsa (Chili Sauce):
This is a recipe that can be eaten as breakfast or supper. Again, once in a while Deb and I both like breakfast…for supper. This is a recipe that can be used for this.

  • 4-eggs
  • 4 tablespoons of salsa (we use chili sauce)
  • 3 tablespoons sour cream
  • ½ cup shredded cheese

Preheat your oven to 350. Combine all ingredients (except cheese) in a bowl and beat well. Then put this in a small buttered baking dish or pan. Cook this for a few minutes until your mixture starts setting up, take out, sprinkle your cheese on top, then place into the oven just long enough to melt your cheese. Take out and serve. This makes two good servings.

I know you guys may have wondered from time to time how Deb and I met. Without going into any long drawn out explanation, I’ll just tell you that when we did finally meet the line I used to capture her heart. For all you younger gents out there remember this, cause once I laid this on ole Deb…she was mine!

I said, “Deb, your britches is just like mirrors.” She says, “Why you say that Dub?” I said, “Cause I can see myself in em!”

One more quick one on Deb. We used to call her “Punkin Junction” because she was raised so far out in the woods of North Florida. We’d been dating a while when she came by the house one afternoon.

She came in with a sack under her arm, and I could tell that whatever she had in it, had obviously really excited her!

She came in and told me, “Dub, come in here and look what I found!” I went into the kitchen and could see right off the bat she had a shiny new thermos.
Well, I knew what it was, but with her being so excited I didn’t want to “bust her bubble.” I asked, “Boy that sure is purty and shiny, but what in the world is it?”

She said, just a beaming, “Why Dub, it’s a thermos.”

I then told her that that was really something, and where’d she get it? She said she’d bought it up at the TG&Y, after the sales clerk told her how handy they were!

I asked her, “Well, what’s a dern thermos do?” She immediately replied that a thermos keeps hot things hot, and cold things cold!

I said, “REALLY, what you got in it?”

Her answer…two cups of coffee and a popsickle! If she reads this today, I’m in big trouble!

Blueberry Muffins:
What goes good right behind a supper of breakfast…in my book, Blueberry Muffins!

1-3/4 cups flour
½ cup of sugar
1 tablespoon baking powder
½ teaspoon salt
1 teaspoon cinnamon
4 tablespoons butter
1 egg, beaten
2/3 cup of milk
1 teaspoon vanilla
1 cup blueberries

Preheat your oven to 375.

In a large bowl, mix your flour, sugar, baking powder, salt, cinnamon, and butter.

In a different bowl mix your egg, milk and vanilla, and pour this into your flour mixture. Stir this until all is moistened, then fold in your blueberries.

Grease and fill your muffin pans about ¾ full of your batter. Bake for 20-25 minutes, then insert a knife into your muffins until the knife comes out clean.
