Camping Out Alone…for the first time…Poor Dude

Good morning to ya’ll this morning. Welcome back to Ridin’ Out the Recession in Miz Judi’s Kitchen with Deb and I both. I sure hope everyone’s doing fine today!

I was checking ole Deb out this morning listening to what she had to say to you good people. I think she did a fine job with her column this morning, on a subject that we both feel very strongly on…our children and our grandchildren!

Normally if I’m “butterin” Deb up, it’s usually on account of I’m in, or have been in the “doghouse” over something probably not of my doing! Then again, I may HAVE been the instigator, but indeed learned early on in our marriage, even if you really did do something…never own up to it!

Ruthie’s Chip Beef Dip

This recipe is a dip and it’s a dern good one too! My Mama has made this numerous times and it’s always a hit. We were going through some of Mama’s recipes this morning and there it was, laying on top in one of her recipe books. I pointed out in the yard and told Deb, “LOOK!” Soon as she turned to look, I grabbed this recipe & took off upstairs! Gotcha Deb!

Dave’s Cheese Grits

Dave Rankin is a good friend of my Mama’s and Dad’s, and all the family as well. Dave’s a great guy and loves my Mom to death. Dave’s been in the banking business for many, many years, and I believe may have been all his life.
I was going through Mama’s recipes, and ran across one Dave had tossed in the hat. I don’t think I’ve banked with Dave before but got to thinking this morning…”You know what Dub? Things are indeed tough right now, and with that said, these tough times may continue to deteriorate, and literally become really, really, tough times!”

Made me laugh.  Several summers ago, about 50 plus or minus, I took my trip to the “Big Lake”!   My Uncle Bob had been in an auto accident and was in a wheel chair.  He could drive but not get around very well on his own.  He was a little crazy on a good day!  Anyway, his Dad had a trailer park on Marathon Key and Uncle Bob decided to drive from De Land to Marathon with myself and his three small children.  He sold it as a better place to convalesce for awhile.  I think he wanted to get away from my Mother’s younger sister!  We had one of those crazy trips that all kids love.

Rising food and fuel prices

Good morning. Is everybody doing okay today? We’d like to welcome you all back to the Coverin’ the Bases section of Ridin’ Out the Recession! We’re awful glad you’re here with us again!

As you people know, Deb and I have been talking with you in regards to putting up a little extra food as you can, and even ways to preserve it. Please understand these are very important topics, and we feel topics you need to learn as much about as possible.

Today, food IS an investment for the future. Why? Because for the first time in my 54 years on this earth, I honestly have no idea what the future brings. Do you? There are so many different things going on today, not just here in the U.S., or Canada, but literally world-wide that could trigger violence of some sort.

Hi Dub & Deb,
Love your new site. Congratulations on your success. I live on the North Carolina coast and went through a series of hurricanes in the late 90s, as well as having to “suit up” for several since then that bypassed us. I thought a few things that I learned might be helpful, as we had extended periods of time with no electricity or water:


  1. Gas cookers; a gas grill or just a cooker on a stand like you can use for canning outside. Always have extra propane tanks on hand.

  2. Battery drawer: I keep a drawer just for batteries and go through the batteries at least once a year to make sure they’re still good. I keep several Coleman battery lamps in operable condition.

  3. Camping shower: Can put water in the bag in the morning, sit it in the sun and have a warm shower at night.

  4. To prolong the cold temps in your freezer, put freezer bags of water in the freezer and let it freeze. It can also be used for drinking or cooking after it thaws.

  5. Learn to use less water. We learned to survive on a gallon per person.
I could bathe, brush my teeth and flush the toilet with the same gallon of water.

  6. Invest in a camping potty. Hate using them, but they are good to have in prolonged outages.

Air boat rides on Lake Okeechobee

Welcome back to Miz Judi’s Kitchen! I hope all are doing well today. Thank you for coming back to visit with us once again.

I would like to share a story with you today about Lake Okeechobee. I have always heard how big and pretty it was, but had never seen it.

When we moved down here from north Florida, Dub and I had talked about riding down to see it one afternoon. It was only about an hour from where we’d moved to, and one Sunday we were just setting around and I asked Dub, “Why don’t we take the kids and go see it?” He said yea,’ let’s do! You know they have airboat rides and the kids would probably enjoy it!

Fond Memories… From my Two Years in Mississippi

Good morning to all! How are you fine people today? Welcome back…To Ridin’ Out the Recession in Miz Judi’s Kitchen! Good seeing you all again!

You know, I got to thinking back yesterday about how things stick in your mind even after so many years have gone by.

Back when I was growing up we didn’t have i-phones, computers, video games, shoot T.V’s were just making an appearance. If you had one, at midnight they went off the air…gone! We were outside from the time we got up in the morning, well, till black dark!

Shelly Mae’s Blackberry Cake

Once again we’re hitting up ole Shelly Mae. I believe she’s coming for her recipe book this weekend, so we’ve been making copies and pulling some up for you guys as we go along. Don’t fret though, if she gets too pushy we’ll just lock the dern gate and that’ll put an end to that!

This recipe sounds really good and Shelly Mae said it is delicious! Deb and I’ll be tryin’ this one for sure!
