Hoe Cake and Corn Puffs

This stuff I love, and like to see Deb make us up a panful. We use it as a bread for supper, and the next day, I like to sop it in honey, or syrup at breakfast. Many bake it, but Deb does it on the stovetop in a skillet…um, um!

In a tough economy like we’re in today, this is very economical as well. Have you guys seen the price of store bought bread today? Is this crazy or what? This, or cornbread are both easy to make, and both would be strong food staples, IF we were to have some type of food shortage.

I looked up the reasoning for the name “hoe cake, “ and was kinda shocked from how it was derived, but in the same breath, the name made perfectly good sense.

Queen Bee, Mama Bee, and the ‘Imadumee’

Quickly this morning…more great news on the home front. As you all know, Deb’s bone test came back 100% clean. Deb had to put off her test to check the rest of her body, as her EKG wasn’t quite right. Anyway, she was scheduled for a stress test, and we had the results read to us yesterday…SHE ACED IT! YES!

We now go Monday morning to have the test run in Orlando. This will tell us if the rest of her body is clean of cancer as well, except for the one breast. Two down, great results, one to go!

Thank you all once more for your terrific support and your prayers! All are greatly appreciated. Please continue to keep Deb in your hearts as we proceed along. You all have been just a tremendous help to us both. Thank you all again!

Well, as you all have seen, I might like a good laugh from time to time. Today would have been no different, EXCEPT, the tables were turned this time and the laugh was on me, instead of the usual, other way around!

Momma, “Cooter Baby,” and Masked Insurance Agents

Deb and I had run to our bank this morning first thing. I met my “new banker,” The bank has moved staff around and “my man,” Mark, who by the way is just a great guy, was moved to the Bartow branch.

Poor Corn Production, and How ‘Bout helping Me Out Here??

Good morning to all and welcome back to another Ridin’ Out the Recession.

This morning I’d like to share with you a response from Kunoichi she’d sent back to me, in regards to the “skipped corn,” in our larger garden, which from here out we’ll describe as simply, the garden. Our raised bed garden up by the house is called raised bed garden anyway, so what’s the difference??

Green Tomato Spice Cake

Many of you now have your tomatoes planted, and if like me, are almost biting at the bit for them to ripen and have that first “tomato sandwich,” of this year!

I also love fried green tomatoes, but I try to hold off on those, until I start getting some ripe one’s coming in first, but I do love them both ways.

Sandra, or “Mississippi Queen,” and a Folk Medicine From Vermont:

I would like to share something else with you guys today, and once again this comes from Sandra in Mississippi, “Hey Sandra…what’s up??

Sandra sent to us a Folk Medicine from Vermont, and the timing couldn’t have been better!! Why you ask? Well it seems that the Koonti plant is poisonous, and there seem to be many varieties of plants that are very similar in appearance to the cattails, which are also poisonous.

Although these similar plants don’t have the big brown heads found on the cattails…and this is the defining difference, be careful. I’m beginning to lean to the side of caution. Oh, I’m gonna cook em up, and I’m gonna eat some, but I believe I’ll let ole Dale try out my first batch! LOL!!

Bonnie, and Eatin Cattails

Good morning to all and welcome back to Riding Out the Recession! We’re glad you came by again so why don’t you grab a chair and…take a load off!

Right off the bat this morning, let me just say that in regards to Deb’s article about my eye glasses and them on the missing in action roster for 3 years…she was exaggerating! I couldn’t have misplaced them for over 30-32 months, tops!

I do have to say though, that when I went to get my shower on the night she was describing, I DID think I had a busted blood vessel in my chest, and man, I was glad to see that it wiped right off!! I still cain’t believe she told that on me though, and….payback’s you know what!!

So look out Deb, you don’t ever know when the urge may strike me…for a little payback!

I am so glad to see my “ole Deb” back in the saddle today, and telling you guys a story, even if it was “stretchin’ the truth a mite!”

Cheap Glasses, Expensive Glasses Men and Heart Attacks

I would like to welcome you all back to Miz Judi’s Kitchen. I hope this finds everyone happy and healthy.

You know, it seems like when you buy something that doesn’t cost a whole lot you can keep up with it forever.

But on the other hand, if you buy something that costs quite a bit of money, it seems like you just can’t keep up with it. Myself personally, that’s not how I am, but in regards to another member of our household, this statement fits him to a tee!

Swamp Cabbage Slaw, C-Daddy’s Swamp Cabbage

I had mentioned earlier that Jane had written in with a question for us.

“When I was young in south FLA I remember going out to the Glades to a fish fry and having swamp cabbage slaw. Is that something made from cabbage palms? If so, it was delicious. I’m in urban GA for this part of my life and still remember swamp cabbage slaw. Thanks for the reminder.”

Yes Jane, if you were eating swamp cabbage slaw, it was made from the cabbage palm. Here are for you a couple of recipes.
