Swamp Cabbage Slaw, C-Daddy’s Swamp Cabbage

I had mentioned earlier that Jane had written in with a question for us.

“When I was young in south FLA I remember going out to the Glades to a fish fry and having swamp cabbage slaw. Is that something made from cabbage palms? If so, it was delicious. I’m in urban GA for this part of my life and still remember swamp cabbage slaw. Thanks for the reminder.”

Yes Jane, if you were eating swamp cabbage slaw, it was made from the cabbage palm. Here are for you a couple of recipes.

Jane, like you, C-Daddy is from Florida, and now resides in Georgia too. He lived next door to Deb and I for a number of years, walked over to our porch one morning, and declared, “Dub…Deb…I’m headed to Georgia,” and dern if he wasn’t. That man knows he could make a good bowl of swamp cabbage! I loved it!

I called him this afternoon and got his recipe for you. I hope you like it…I know I do!

C-Daddy’s Swamp Cabbage:

  • 10-12 bacon slices
  • 2 cans diced tomatoes
  • 2 cans Heart of Palm
  • 1 large onion, diced
  • Salt and Pepper to taste

Cut bacon in small pieces, and add onion. Fry in skillet until done.
Havle tomatoes and palm in pot, and add bacon and onions.
Bring to boil, then simmer for twenty to thirty minutes.

Swamp Cabbage Slaw:

  • 3 cups swamp cabbage
  • 1 cup chopped onion
  • 1 cup mayonnaise (I prefer Miracle-Whip)
  • Salt and Pepper to taste
  • Paprika
  • (You can use canned Heart of Palm from the Supermarket)

Mix all ingredients together and top with Paprika

You can also shred the heart of palm, add orange and grapefruit slices, cherries and shredded coconut, any type of fruit you like actually, and have a fruit salad using it.

Just chill and serve.
