How’s Deb?? She’s Doing Great!

Good morning to all our friends, and welcome back to Ridin Out the Recession! What a beautiful day this morning here in the Sunshine State! Makes you want to get out and enjoy what our good Lord provides for us!

As a matter of fact, it’s so pretty out today, I believe I’ll line ole Deb up with some chores for her to take care of. She’s been gone to N. Fla. for her family’s “early Christmas,” you notice I didn’t use the word…holiday, right? LOL!

So, while she’s been gone, things have been neglected to an extent. The garden needs weedin, okra needs to be picked, she probably will get a weed-eater put in her hands (around the porch and fence it’s getting a little shabby lookin), the vehicles could stand a washin, Cheyenne and Susie both are in need of a bath, and the downstairs needs a good moppin!

Once she gets these things caught up, I’ll let her have the rest of the day off and do something she REALLY enjoys…tendin to ole Dub! Poor ole thing has been off without me for the last three days, and I sure hope she can keep her hands off me till she gets caught up on her chores. LOL!

Thanks Bill and Sandy! Sloppy Joes, Black Forest Cake, and Mississippi Mud Pie:

Good morning. We hope everyone is doing well today.

We had some friends of ours send Deb and I an e-mail a couple days back. They’re Bill and Sandy, and they live in Mobile. They’ve become friends just like so many of you guys have since the startup of our site.

Anyway, although I’d seen this before, Deb and I had never participated in one. It is a pretty dern neat way of sharing recipes. So, Deb and I participated, and what a great way to pick up recipes from friends around the Country, and even worldwide. We thought it was a very good idea.

So, I thought we’d take it a step further, and put it up on the site this morning. If you guys would like to participate, feel free to do so. We’re always looking for new recipes and we found this unique in its ability to supply you with tried and proven ways in which to prepare meals.

Just take a look at the way this is done, and again, if you’d like to participate…just jump right in. You send one, and in return you’ll be supplied with many. The way to go about this is very simple. This in itself is a Godsend for me, cause…I’m pretty simple anyway.

Eggplant and Tomato Casserole, Hash Brown Casserole, And…Macaroni and Cheese:

Good morning once again, and welcome back into Miz Judi’s Kitchen. Thank you once more for stopping in to visit with us again today! You guys are great!

Today we’ll share a few more casserole dishes with you guys! I’m not sure about the rest of you, but I personally, kinda like a dish that’s got a little of everything in it! It’s almost like a “one stop shop!”
The more I can get on my plate conveniently…the better I like it, and with a casserole you’re getting a pretty good dose of all of it with every scoop of the spoon! I like that!

Actually, any casserole for that matter, are all pretty much meals in themselves. You want veggies, shoot, just chunk em in. Ya got your veggies. Rice??? Just toss it in! Even most any type of meat can be added to whatever type of casserole you may serve!

They are very versatile in the number of ways you can mix or match em. Your own taste is basically the only drawback. So a good rule of thumb when mixing up a casserole is very simple…if you like it, why not toss it in with the other ingredients! If you don’t like something in particular, why would you put it in anyway?? Gimme a break! LOL!

Our “Camphouse,” and Prepping For the Greenhouse:

Good morning guys! How’s everybody today? It sure is a beautiful morning down here in Central Florida! We hope this finds you all well, and in good spirits. Thank you once more for stopping in to visit with us again. You guys are great!

We put up a few videos and I believe I’ve talked with you all before about our camphouse. We did a video of it and I thought I’d share this with you guys today.

We built it at the suggestion of our oldest son, Josh. Deb and I had put up a gazebo about 100 yards out behind our house. We built it 14’x14’. We did this as a little “break place,” to get out of the summer heat, and it’s under such a large canopy of trees, it stays about 20 degrees cooler than it is out in the sun. Ole Dub’s “all about that!”

Anyway, Josh asked if we’d mind letting him close it in and make a camphouse for him and his boys to use? We told him that it would be fine, and that we’re glad to do it. The reasoning…get them boys outdoors!!

Sweet Potato Cobbler with Streusel Topping, Lemon Blueberry Cream Pie, and Fried Strawberry Pies:

Hey guys…what’s up? Welcome back to Miz Judi’s Kitchen. Pull up a dern chair and sit awhile!

You know that Deb’s had me…GASP…on a diet. I’m down to 278, which happens to be, hang on, I’m tryin to do the math. I’ve had to kick my shoes off to help me add this up…hmm, looks like…39 pounds. Shoot, if I’d been a normal size guy to start off with, I’d probably look like I had aids by now!! LOL!!

But, being as I was, well, let’s see, kinda pleasantly plump, I’m still…kinda pleasantly plump, just not quite so bad!! LOL!!

Anyway, desserts have not been on Deb and my list of things to eat for the last few months. She surely doesn’t need the sugar, and dad-gummit, I REALLY don’t either! So, most times now, desserts to us are like…fantasizing!

Yeah, it’s quite a bit different than fantasizing at say, age 25, but I gotta tell ya something. I can’t honestly say that my fantasizing over a dern dessert at age 55, is ANY LESS appealing than fantasizing over, well, let’s just say something else, when I was 25!! LOL!!

Bumpy Mashed Potato Casserole, Layered Zucchini Casserole, Potato and Bacon Casserole, and Broccoli and Potato Casserole:

Good morning to you guys, and welcome back to Miz Judi’s Kitchen. We’re glad to see you all again today, and thanks for stopping back by!

Today we’re going to talk about casseroles, and their ability to supply your family a good nutritious meal for a very reasonable cost. On top of this, casseroles are normally very easy to make, have usually a very short prep time, and most are really tasty to boot.

These same reasons make casseroles very appealing to families today in such uncertain economic times.

Many times both parents are working so this is another draw in regards to casseroles. They can be made up ahead, and kept in the refrigerator, and once arriving home from work, Mom or Dad, either one, can set them in the oven, warm them up, and…dinner’s served!

Canning Sweet Breads and Homemade Sauces:

Hello everybody, and welcome back to Ridin Out the Recession, in Miz Judi’s Kitchen. Today we’ll talk just a little about canning sweet breads and homemade sauces.

The reason for this is we had a reader who had a couple questions in regards to these topics. OmaLinda wrote in and was wondering about canning brownies.

Her questions were as follows…

Have you tried canning brownies? They are my favorite dessert, but I’m not sure how long to bake them in jars, since normal testing techniques for cakes/breads do not work well with chewy brownies.
I would also like to can my own spaghetti sauce with meat in the oven. Do you have directions for this somewhere on your blog?

Our answer is simple enough…possibly. Now, on to something else…just kiddin OmaLinda!

Adventure Theater…with Dub and Deb!

Good morning guys…how are you today? It’s good to be back visiting with you again.

You know that Deb and I took a trip…Vicksburg, Gulfport, and Mobile. We’d rented a motor home and set out last Sunday morning about 4:30. We left home and had basically no traffic until we’d gotten to almost Tallahassee.

We were like…man, this is just going TOO smoothly, especially on the last travel day of the Thanksgiving long weekend. Where in the world is all of the traffic we were anticipating? We just guessed most must have gone home on Saturday, or, so we thought.

But, about Tallahassee it began to get heavier…and heavier…AND HEAVIER! Still though, it was no problem. Everything was flowing smoothly, and there just weren’t any problems. Like I’d said earlier…things were going just too smoothly.

A Couple Updates…Our Trip, and the Hog Trap…with video’s:

Hey guys, how are you? We hope all goes well for everyone, and once more, we hope you all have thoroughly enjoyed your Thanksgiving and its long weekend!

You know Deb and I are headed to Vicksburg, and although we’ve had a couple of delays, what else is new, we’re leaving out Sun. morning at 4 am. We’re really looking forward to the trip, and are ready to get headed out.

This will be Deb and my first “vacation” to come and go as we please, in maybe 5-6 years, and goodness gracious, I hope I know what to do with myself.

We’ll start off stayin with Sandra, or “Mississippi,” so as bad as I hate it, it’s looking like I’ll have to have my “manners on.” I sure hope I can pull that one off, but I promise you, ole Deb’ll keep close tabs on me! Course, that’s her job description…keepin Dub outta trouble!

She does a good job at it, but good night, she’s on call 24-7 in that regard…

Wishing You All, a Very Happy Thanksgiving!

Hey guys. We’re awful glad you’ve stopped back by to visit with us again…Happy Thanksgiving!

Isn’t this time of the year just outstanding? The holidays are getting underway, and the first being Thanksgiving. Isn’t that just a wonderful word by itself? THANKSGIVING…it couldn’t get any more self-explanatory than that, could it?

I know in our household it’s all about family and friends, good food, good fellowship…and FOOTBALL! Not necessarily in that order. LOL!
