Diabetic’s Waldorf Salad, Spinach and Strawberry Salad

As you guys know we’ve gone through a little scare with Deb, so in this regard I thought possibly something a little healthier may be a good way to start off our recipes for you today.

Both these come from our daughter-in-law, Shelly Mae’s Church Cookbook. She’s going to hurt me if I don’t get off this “Shelly Mae” kick, but shoot….what are in-laws for??

This first recipe is for diabetics.

Diabetic’s Waldorf Salad:

  • 4 teaspoons mayonnaise
  • 2 teaspoons unsweetened pineapple juice
  • ¼ cup chopped walnuts, or pecans
  • 3 small red apples
  • ½ cup diced celery

Mix the mayonnaise and juice. Dice the apples, and mix with the celery and nuts.
Fold in the dressing.
Orange juice may be used instead of pineapple.

Spinach and Strawberry Salad:

  • 1 bag of spinach leaves
  • ¼ cup raspberry seedless preserves
  • 16 oz. box of strawberries
  • 2 teaspoons raspberry vinaigrette
  • 2 ripe kiwis
  • ¼ cup vegetable oil
  • Almonds (to suit your taste)

Wash spinach, and remove stems.
Place in large salad bowl. Mix oil, preserves, and vinaigrette and set aside.
Peel kiwi and slice and wash strawberries and slice.
Spread strawberry and kiwis over spinach.
Sprinkle almonds over top.
When ready to serve, pour raspberry mixture over salad mix.
