Good morning and welcome back once more…to Miz Judi’s Kitchen!

I hope this finds everyone healthy, and happy! As for me, well I’m just fine, because we have one beautiful day outside! It was kind of cool this morning, but the day has turned out absolutely perfect! Spring has sprung!

So, I thought I’d pick at Dub today, since I haven’t done much of that lately, he’s due! So, you better look out today, Dub.

Ladies, you know men are always asking you where something is, right? It’s like they have no legs, or feet, that will enable them to go look for themselves, or it is around this household anyway.

Tasty Campfire Apples in Tin Foil, Strawberry Shortcake

Not too long ago, Deb, our two boys and their families, went to Live Oak to stay a few days and visit with Deb’s family.

I told Red’s daughter Shelby Lynn to be sure and bring her Papa back a present, and Deb said Shelby Lynn wasn’t about to let them forget it!
Well, this is the book they brought me back…thanks Shelby!

Tasty Campfire Apples in Tin Foil:

This treat you might like to try while you’re grilling supper one night. We’ll be trying some of these next time we grill. Also we build a fire outside to hear the fire crackle, and sit back and just watch it burn. This would be something to do while enjoying the fire, and make a good snack for the grandkids at the same time. Grandparents too!

  • 3-4 apples
  • 1 cup chopped walnuts
  • 1 cube butter
  • ½ cup maple syrup

Peel and cut apples into slices taking out the core. Combine the melted butter, maple syrup, and nuts in a bowl. Place a small handful of apples onto a piece of aluminum foil. Top the apples with a large spoonful of the nut mixture. Fold the foil, leaving an opening for ventilation. Place on the campfire and cook 30-4- minutes, or until apples are soft, but not mushy.

Since it’s the time of the year strawberries are coming in here in Florida, how about a Strawberry Shortcake Recipe!

Strawberry Shortcake:

  • 2 cups flour
  • 1/2 cups sugar
  • 1-1/2 sticks margarine, softened
  • 3 teaspoons baking powder
  • 1 egg, beaten
  • ¼ to 1/3 cup water
  • 2 lbs. strawberries
  • ¼ to ½ cup sugar

Cook in oven at 325-350

In a large mixing bowl, combine flour, sugar (1/2 cup), and baking powder. Add margarine and cut it into the mixture with a fork or pastry cutter. Work it as little as possible—leave margarine in chunks. Stir in the beaten egg, and enough water to make a sticky dough.
Once again, do not over mix. Transfer the dough into a medium (10 inch) Dutch oven that has been lightly dusted with flour.

Bake for 30-45 minutes, or until top is lightly browned.

Wash and cut strawberries in half, and mix with sugar in bowl.

Serve shortcake with strawberries on top. Also good with milk poured on top, too.

Canning Sweetbreads, and Cake!!

Good morning! Welcome back to Ridin’ Out the Recession! We’re glad you guys came back to visit with us again!

This morning we’re going to show you all how to can your own cakes, and sweetbreads. I know we’ve been promising showing you all how to do this since day one, but really we’ve had some priorities that I couldn’t turn my back on, so I apologize.

Yesterday Deb asked me, “When are you going to show our friends how to can cakes?” I replied, “Deb, you know I’ve had some very pressing things on my mind!”

Raised Bed Garden

Good morning to you guys, and welcome back to Coverin the Base! Thanks for coming, and we hope all’s well in your neck of the woods today.

Leave our Country’s Morals, Values and Standards alone

Good morning and welcome back once more…to Miz Judi’s Kitchen!
I would like to talk to you today about something that has been on my mind for a while now. I usually don’t talk about politics, but this morning I thought I would share with you a few things that I have been on my mind, and thought I’d see what you might think.

First off I love my Country, and I want my grandkids to know the same freedoms that I have always known.

Why do you think people come to America? You and I know, it’s because it’s the greatest Country on Earth, and you can do anything you put your mind to do.

JC’s Momma’s Pecan Pie:

These recipes come from Mrs. Carolyn Davis. “Back in the day,” Mr. and Mrs. Davis were my second set of parents. Their son Jeff and I hung out together a lot…a whole lot!

Jeff’s Dad, Mr. Davis was tough. He looked tough, and when he grabbed a hold of you…you knew you’d been grabbed ahold of! He was tough! When we got a little older, and into high school, Jeff and I, but mainly me, would get into his “Cold Duck.”

Just read your article in the Canada Free Press on the Excalibur. Bought one 30 or 40 years ago when we were still on the farm in Vermont. Door hinge on right side broke about 30 minutes after unpacking but had no effect on the operation.

Good morning guys, and welcome back to Coverin the Bases, in Miz Judi’s Kitchen. Thanks for coming and it’s good to be here this morning!

Saving Up For a Food Dehydrator:
Let me start off saying thanks to everyone who wrote in to us with all the great comments, opinions, and info in regards to Deb and I purchasing a food dehydrator.

Deb won’t be here with us this morning. I dropped her off last night about ten miles from the house, and told her to start picking up cans to help offset the purchase of our new dehydrator. Anybody happen to know what aluminum is bringing at the junkyard these days?

Ambulance Rides and “Red” Once Again

Good morning, and welcome back once more…to Miz Judi’s Kitchen!

Have you ever notice how one child doesn’t want another one to get more attention than they get? After saying this, I’d like to share a story about our two sons. Josh was 12 and Mark, or Red, as Dub calls him, was 8.

Josh, our oldest, and Mark were at the cow pens helping Dub work cows. His saddle was evidently loose, it shifted, he took a spill, somehow got his foot caught and broke it. Well Dub being a man, didn’t think it was broke, and only twisted, so he kept him down at the cow pens for about another hour after it happened…and that’s another story. I’m going to change that topic now before I go down and slap him, and he won’t even know why!
