Well, I don’t know about the rest of ya’ll, but dad-gum, I sure can’t believe another year has bout come…and gone! Isn’t it crazy how fast time goes by anymore?? It just clicks right by, doesn’t it?

I guess the only thing I can attribute this to is age?? Ole Deb keeps getting older, and the dern years have started runnin by us like water off a duck’s back.

Uncle Dave…we’ve lost another good friend:

Hello again, and welcome back to Ridin Out the Recession. We’d like to thank you guys for stopping back by!

Deb and I have a good friend and his name is Uncle Dave, or at least that’s how we’ve always known him. I’m ashamed to admit it, but I don’t know Uncle Dave’s exact age, but it has to be around 67 or 68.

Uncle Dave went to college with another friend of ours, Ronnie, who we knew as Turtle…Deb’s nickname for him. He was labeled this on account of he drove so dern slow. Honestly, when Turtle got out on the highway in his truck the hair on his head wouldn’t move an inch…with the windows rolled…DOWN!!

A Video I’d Like You Guys to Watch:

This is a video I found…by mistake. A good friend, Bill, had sent a video they wanted us to watch, and it was pretty fantastic. It was of a house in Tallahassee, that over Christmas they had decorated and won the National contest.

It is beautiful, and was done in support of our troops. All four armed forces songs play over the loudspeakers, as well as God bless the USA. The lighting is phenomenal, and it’s really very pretty.

Shoot, I’m gonna show this one too…it’s late for Christmas, but the message is still there! Plus check out the www.SemperFiFund.org

This next video, like I said, I stumbled across. What an eye-opener. We get caught up in our own lives, and sometimes, but not often, forget, or don’t realize the sacrifice our troops give daily for our freedoms.


So, in closing this out for today, always give thanks to our troops. Put them in your prayers as well. These men in women represent the good in our Country, and without them our freedom is only an expression.

This young man, through his song, literally made me stop, and think of the sacrifice they give, and really touched my heart. Again, please put these young men and women in your prayers!

I hope you all enjoy this as much as we did!

Copper Penny Salad, Seven Layer Salad, Macaroni Salad, and Potato Salad:

Hey guys, and thanks for droppin back in again!

I know you guys must think we’ve lost our minds with three consecutive posts on…dern salads! But, there is a method to my madness…I think!

In actuality Deb and I are in the middle of a cookbook we’ll be putting out here before long. It’ll be a lot of recipes, and a lot of storytelling, jokes, and basically, just having a good time doing it. With that in mind, going through our old posts, we were very lacking in regards to having many types of salads.

So, we’ve spent the morning listing many of our old salad recipes. Well, when we post, we use WordPress, and I really like the look of the finished product from this. So, if I was going to use WordPress, shoot, I thought I’d just go ahead and post them on site as well.

By doing this, I guess you could say…I’m killin two birds, with one stone. Lazy is another way to describe this too! LOL!!

Bean Salad, Broccoli Salad, Black-Eyed Pea Salad, Rice Salad, and Marinated Tomato Salad:

Bean Salad:

  • 1 can red beans, drained
  • 1 can garbanzo beans, drained
  • 1 can whole corn, drained
  • ¼ cup chopped onion
  • ½ teaspoon salt
  • Dash of black pepper
  • 2 tablespoons salad oil
  • 2 tablespoons vinegar
  • 1 cup diced celery
  • Pepperoni
  • Olives
  • Cherry tomato

Combine beans, corn, onion, salt, pepper, and oil. Cover and marinate in the fridge at least 1 hour. When ready to serve, add celery, and vinegar; mix lightly. Serve on lettuce leaves, and garnish with pepperoni, olives, and tomatoes, as desired.

Frozen Banana-Pineapple Salad, Fresh Apple Salad, Cherry Salad Supreme, Cranberry Salad, and Fruit Bowl Supreme:

Good morning, and welcome back to Ridin Out the Recession, in Miz Judi’s Kitchen! We hope all are well, and life is good!

Well today we won’t be firin off a dern cook stove, but we’ll be makin up some salads…fruit salads.

Deb and I both love salads, and fruit salads rank right up there with our favorites. Down here when it gets so hot, man, a good ole fruit salad is mighty hard to beat. Just chill “them bears” off, and boy is that refreshing!

But it really makes no difference to either of us, fruit salad, or vegetable salad either one. Both can be refrigerated, plus both are nutritious as well. They’re very versatile in the number of ways you can prepare them, and in reality…if you like it, chunk it in!

With our citrus season beginning to get into full swing, we’re really enjoying our fruit salads, and the juice they supply us with as well.

You know that we’ve been juicing 20-25 fresh fruits and vegetables each morning. Since the citrus is coming in we’re using that as an additive to our daily juicing. We’ve been adding 2 grapefruit, 4 hamlin oranges, along with 3 tangerines. This really gives our other juicing’s a big flavor boost, plus it gives a good mega-dose of Vitamin C along with all the other nutrients we’re getting. We love it!

Don’t Get Between a “Southerner,” and…THEIR GRITS!!

Good morning guys, and welcome back to Ridin Out the Recession…in Miz Judi’s Kitchen! We sure hope everyone had a super Christmas! Boy I know we sure did!

We’d gone up to my Mom and Dad’s, and good gracious, what a feed my Momma put on! I’d told you guys earlier that we now have a Christmas breakfast, and boy it’s a “goodun!” I ‘ve got to say that one of her breakfast staples is exactly what today’s post is all about…grits!

First off, I just can’t believe the people we’ve met that have never tasted them. I swear, for those that haven’t, you honestly don’t realize what you’re missing!

I understand there are some things that some people just won’t eat, and I’m a good example of this statement. One thing I don’t like that you guys will find amazing I believe is…I won’t eat a dern sweet potato! Believe that? Ole Dub won’t get one of those around my mouth, uh, uh!

Good morning guys. How the heck are ya’ll today?

Well, it’s bout that time again, huh? Ole Santa is already gearin up for a mighty big night! You reckon there just might be some excited children runnin around this evenin? Those little fellers are on go, I grant ya!

Honestly, I can’t believe that another year has almost come and gone! Where in the world does the time go? Deb and I talk about it all the time.

Well, with tomorrow bein Christmas, I figured we’d put up some recipes that are very good this time of year, and not only that. These recipes are very easy on your pocketbook too! I don’t know about all you other “BROKE Santas” out there, but here in our household it’s lookin like it might just be soup…for a while!! LOL!

Pork Salad, Peach and Pepper Salad, Fish Salad, and Wilted Bacon Salad:

Good morning guys! Welcome back to Ridin Out The Recession! C’mon in a sit a while…

Well, I guess you all know who’s fixin to be makin his rounds, huh? I was gonna advise one and all you better be good, but shoot, if you haven’t been up till now, I don’t guess there’s any need of changing anything around this late in the game.

Man, we’ve got an excited herd of grandkids runnin around. Bless their hearts, they’re tryin their best to be good, but I don’t know…they might just have too much of their Nana in them to help it! We’ll have to just play it by ear, I guess!

Anyway, if you guys are anything like our clan, and I have to bet ya’ll are, we’ll be putting on a feed bag up at my Mom and Dad’s. Good night at the food that woman puts on a dern table…but I ain’t complainin one bit!

With that being said, ole Deb and I been tryin our best to curb our eating some, and salads are a pretty good place to start. So today, this is what we’ll be sharin with you guys…rabbit food! At least 3 outta 4 have some type of meat in them, so in regards to salads, we’re probably cheatin some…
