Lazy Day Chicken, Grits Casserole

Have you ever had a day you just feel, drained? Well if so, you feel exactly like we do here in Miz Judi’s Kitchen. We sure hope she don’t run us off because of it!

In honor of our lazy mood today, we’re taking a couple of recipes from Shelly Mae’s Church Cookbook, and the first we find quite appropriate! We hope you enjoy them!

Lazy Day Chicken:

  • 2 cans mushroom soup
  • 1 cup milk
  • 1 cup rice (uncooked)
  • 1 package onion soup mix
  • Chicken pieces

Mix mushroom soup. Add dry soup mix and milk and pour all into an oblong baking dish.

Sprinkle rice over mixture evenly, and top with chicken pieces.

Cover with foil and bake on 350 for 1-1/2 hours.

Grits Casserole:

  • ½ cup grits
  • 1-1/2 cups grated sharp cheese
  • 3 cups milk
  • 4 large eggs
  • 1 teaspoon salt
  • ½ stick of butter

Cook grits, milk and salt until milk is absorbed. Mix in ½ stick of butter and sharp cheese and the 4 large eggs. Pour into a casserole dish. Bake on 350 for 1 hour.
