Chicken Pilau and Sloppy Joes

I’m going to continue with another couple of recipes from my OLDER sister Louise’s church cookbook. Since I’m trying to keep Dub busy outside with his, I mean OUR spring cleaning.

I love putting these recipes up for you good people to share, because I know many of these people who’ve given these recipes, as once again, they’re all from my home. It brings back memories while I’m copying them down for you!

I hope you enjoy them!

Chicken Pilau:

  • 1 whole fryer
  • 1 large onion
  • 1 lb. smoked link sausage
  • 3 cups uncooked rice
  • 4 quarts broth (that you cooked the chicken in)
  • salt and pepper to taste
  • Garlic and onion powder to taste
  • (Dub loves carrots in this as well)

In a 6-quart pot, cook your chicken until done. Remove and debone, and shred it well. Brown your cut up sausage in a skillet. Measure out 4 quarts of broth, add your chicken back to it, and then add the sausage and cut up onion. Use your seasonings to season, add your uncooked rice, and bring to a boil, stirring once. Then turn your burner down, and let it simmer until rice is fluffy.

Sloppy Joes:

I remember when I was just a child growing up, I loved a sloppy Joe! I saw this recipe and thought back to when they served them in school. I believe your kids will like these too, as ours always did! Try it out!

  • 2 lbs. ground beef
  • ½ teaspoon salt
  • 1 large onion chopped
  • ½ teaspoon ground mustard
  • 1-1/4 cup ketchup
  • ½ teaspoon chili powder
  • ½ cup water
  • ¼ teaspoon ground allspice
  • 1 tablespoon brown sugar
  • 8 hamburger buns
  • 1 tablespoon white vinegar

In a Dutch oven, cook beef and onion over medium heat until meat is no longer pink, and drain. Add the ketchup, water, brown sugar, vinegar, salt, mustard, chili powder, and allspice. Bring to a boil. Reduce heat, and simmer uncovered for 30 minutes. Serve hot.
