Applesauce Cake, Deviled Chicken

Everybody who knows me knows one thing about me…well two things. I like to talk, and I like to eat. You guys can see the “I like to talk,” handle fits me to a tee, but I like to eat almost as much.

Deb and Red went to Publix today to pick up a few chickens. Looking through a recipe book earlier today, I came across this first recipe, and I promise you, we’ll be using one of those chickens she bought in this recipe. It sounds good, and as the author says, it is delicious when served over rice. I’ll let you know.

We’ve started a high alkaline diet as an alternative treatment, and this means minimum meat. What meat we’re trying to stick with is chicken and fish, but really only eating enough to just say we had a piece of meat. Heavy fruit and vegetable diet.

Cancer can’t live in an alkaline environment, and we’re giving this diet a shot too. This info on the alkaline diet was supplied to us by a reader, and I’d just like to say thanks so much again John!

Anyway, once a week, over the weekend Deb and I “backslide,” and eat a little something more appealing to us. With that the case, this chicken recipe will be on the menu either tomorrow, or Sunday!

Deviled Chicken:

  • 1 fryer cut in pieces
  • 1 tablespoon of dry mustard
  • ¼ cup of oil
  • 1 tablespoon of Worcestershire sauce
  • 2 tablespoons flour
  • Catsup
  • 2 cups chicken broth
  • Tabasco sauce, to your taste

Brown chicken in oil for about 30 minutes. Take chicken out of pan. Stir in flour and slowly pour in chicken stock and stir. Add dry mustard, Worcestershire sauce, and stir. Add Catsup to desired taste, and for a little dash of spice, add Tabasco sauce.

Place chicken back in skillet and cover with sauce. Let simmer for about 30 minutes, stirring frequently. Delicious served over white rice.

Applesauce Cake:

  • 1 cup butter
  • 1 teaspoon cloves
  • 2 cups sugar
  • 2 cups applesauce
  • 2 eggs
  • 1 teaspoon soda, stirred into applesauce
  • 3-1/2 cups cake flour
  • 2 cups raisins
  • 2 teaspoons cinnamon
  • 1 cup walnuts
  • 1 teaspoon nutmeg

Cream butter and Sugar. Add eggs. Add applesauce and soda. Stir in the flour and spices. Now add the raisins and nuts. Bake in a tube pan for 1 hour and 20 minutes on an oven setting of 350.
