Banana Fritters, Cowpoke Beans, Honey Glazed Chicken and…Lazy Daisy Cake

Deb asked me one morning last weekend, “Dub, what sounds good for supper?”

Man…that sounded good to me. Most every time she asks that question, it normally means she’d like to try something a little different, and she’s ready, willing, and able to get up in front of the cook stove…for a while!

I told her to just give me a few minutes and I’d have a suggestion or two. I went to shuffling through a cookbook, and came up with today’s recipes. I then told her what I was thinking about and she just said that she was thinking along the lines of…soup and sandwiches! I told her they sounded delicious!!

Remember men…never argue, it’s bad for our health. But, if you guys would like to give these a whirl, here’s all you need to know!

Banana Fritters:

  • 1 egg
  • 1 mashed ripe banana
  • 1 teaspoon baking powder
  • Dash of cinnamon or vanilla
  • 1 tablespoon sugar
  • 2 tablespoons of milk
  • 1 cup of flour

Mix all ingredients together. Dip out mix with a spoon and fry in deep fat. Fritters will turn over on their own when one side is done. Serve warm and sprinkle with powdered sugar or with syrup.

Cowpoke Beans:

  • 1 pound dried pintos
  • 2/3 cup chopped onion
  • 2 quarts water
  • 14-1/2 oz. can of stewed tomatoes
  • ½ cup chopped bacon (4 slices)
  • ¼ cup chopped parsley
  • ½ teaspoon crushed red pepper
  • ½ teaspoon ground cumin
  • 1 teaspoon salt
  • ½ teaspoon ground marjoram
  • 1 large clove garlic
  • 5 teaspoons chili powder
  • 2 tablespoons butter
  • 1 more teaspoon of salt

Place beans, water, bacon, red pepper, salt and garlic clove in a 5 quart Dutch oven. Cover and bring to boiling. Boil for 5 minutes. Remove from heat and allow to stand in covered pot for 1 hour.

Now heat beans to boiling, then cook covered until beans are tender. About 1-1/2 hours.

Melt butter in a large frying pan. Saute onion until tender. Add stewed tomatoes, parsley, cumin, marjoram, chili powder and salt. Simmer uncovered for 45 minutes.

Now add the tomato mixture to the pot of beans and stir well. Simmer uncovered for another 20 minutes or so, and serve.

Honey Glazed Chicken:

  • 1 whole chicken, cut up
  • ¼ cup of mustard
  • ½ cup butter, melted
  • ½ cup of honey

Mix butter, mustard, and honey. Pour over chicken in a baking dish. Cover and bake on 350 for 1 hour. Then uncover, and bake an additional 15 minutes or until done.

Lazy Daisy Cake:

  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup sugar
  • ½ cup milk
  • 1 cup sifted flour
  • 1 tablespoon of butter
  • 1 teaspoon of baking powder

Beat eggs; add sugar gradually. Sift flour and baking powder. Stir into eggs and sugar mixture; add vanilla. Heat milk with butter and add to sugar mixture. Pour into a greased and floured 8x8x2-inch pan.

Bake on 350 for 30 minutes or until done.

Frosting:

  • 3 tablespoons melted butter
  • 2 tablespoons cream
  • 5 tablespoons brown sugar
  • ½ cup coconut

Combine all ingredients and spread on cake. Place under broiler until golden brown.
