Butterfinger Cookies, Rave Reviews Cake

These two sound pretty dern good to me, but I have to tell you guys, that Deb and I have cut our sugar consumption down to next to nothing. Sad but true.

We’ve just gotten back in, and I was looking through our daughter in law, Shelly Mae’s personal cookbook and ran across these two recipes.

You guys may want to give these babies a whirl. The first (Rave Review Cake),was given to Shelly by a Linda Shores, and it looks like the Butterfinger cookies may be from a recipe she’d picked up somewhere.

If you decide to try these, how bout getting in a bite for Dub and Deb too!

Rave Reviews Cake:

  • 1 package White cake mix
  • 1 package Jello Vanilla instant Pudding
  • 1-1/3 cup water
  • 4 eggs
  • ¼ cup of oil
  • 1-1/2 cup Angel flake Coconut
  • 1 cup chopped nuts

Combine cake mix, pudding mix, water, eggs, and oil in large mixing bowl. Blend, beat at med. speed for 4 minutes. Stir in coconut and nuts. Pour into greased and floured 10 “pans (3), and bake on 350 for 1 hour.

Rave Review Cake Icing:

Cream 1/3 cup of butter. Blend in 6 oz. cream cheese. Add 1 box confectioners sugar, alternately with 4 teaspoons of milk, beating well after each addition. Add 1 tablespoon vanilla.

Spread frosting over top and sides of cake. Sprinkle with Angel Flake coconut.

Butterfinger Cookies:

  • 1-3/4 cups flour
  • 1/4 teaspoon salt
  • ¾ teaspoon baking soda
  • ¾ cup sugar
  • ½ cup butter or margarine
  • 1 egg
  • 3 (2.1 oz.) Nestles Butterfinger candy

Preheat oven to 375. Combine flour, baking soda, and salt in a small bowl. Beat sugar and butter in a large mixing bowl until creamy. Beat in egg; gradually beat in flour mixture. Stir in Butterfinger candy pieces. Drop by slightly rounded tablespoon onto ungreased baking sheets.

Bake for 10-12 minutes or until lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
