Mother’s Day, Family and Dub’s tall tales

I would like to welcome you all back to Miz Judi’s Kitchen. I hope this finds everyone happy and healthy.

I hope this finds you all with a smile on your face and one in your heart today! As for me, I have both! It is a beautiful day and I am enjoying every minute of it! So if you are inside, go outside for a while, take a good look around, and just say thank you God for everything!

I would like to take a few minutes and thank each and every one of you for all your prayers and blessings that you have given to me and my family. You will never know how much they have meant to us, and also I would like to thank ya’ for all the laughs and all the good advice that you have been giving us. Keep them coming.

I do so hope that all of you had a very, very, Happy Mother Day! I hope you had a wonderful time with your own families, and that you Moms remembered to give your kids a hug, and you kids gave your Mom’s a big hug too!

Well, I see old Dub has been having a good time with ya’ about the big tadpoles and the baby ducks. Now you know you have to watch him, because he will stretch the truth a little bit!

Just like that bream I caught… it didn’t weigh no 7 lbs. It couldn’t have weighed but about 6 lbs., and the grasshopper I caught it on…well, as Dub likes to say, “that little feller” only weighed about 3-1/2 lbs. I believe ole Dub’s begun to rub off on me quite heavily! LOL!

As you all know Dub does love to have a good time, and I have to tell you that I never know what that man will come up with next.

We went and had a test run the other day, and I don’t know who was more nervous, me or him. I was on the bed just laying there, and he kept hitting his fingers on the mattress. I’d look up at him and he’d stop…for just about 5 seconds, then he’d start it again. He just couldn’t be still!

Later on the nurse looked at me and said, “Honey, that just shows how much he cares about you.” I told her he might want to stop it, or I was going to show him how much I cared too! We all just laughed.

I know he must have just about drove them nurses crazy waiting for me, because one of them told me, “I am so glad you’re awake now honey, MAYBE you can make that husband of yours sit down!”

I thought she must have had me confused with another patient and THEIR husband! I couldn’t even begin to imagine MY Dub pestering somebody???

Now I’m just picking at Dub at the moment, because I really don’t know what I would do without him, and his love for me! He’s been my rock and my comedian all rolled into one! All I ask of him is, just keep up the good work Dub.

We haven’t been eating like we normally have, but we’re eating A LOT more healthy. Well, Dub has been eating the exact same things I have been eating, so tonight I am going to make us some fresh stuffed peppers, and some squash, right out of the garden as a treat.

I picked 10 bell peppers this morning, so I’ll cut them in half, and what we don’t eat tonight, I’ll food saver them and put them in the freezer for another day. They’ll be as fresh as if we’d have just cooked them, even if thawed months later!

This is one trick that I’ve learned, and that you might want to pick up on, if you don’t do this already.

Foods that you really enjoy, simply cook two or three meals of it at one time, then food saver the rest. You only have one prep, one cleanup, and good, healthy, and home cooked meals that only need to be thawed and warmed! Dub calls it “cheatin,” I call it usin’ my head for something besides a hat rack!

As you guys can tell, ole’ Dub is pretty used to eating just about anything he wants…when he wants. But once again, he won’t eat anything I can’t have, and eats it however I need to eat or juice it.

The other night we were snacking on a few carrots, and broccoli I had cut up for us, and he looks over at me and says, “Deb, you reckon this eatin’ healthy is REALLY good for you?” I just looked at him and then said, “Stop and think about what just came out of your mouth…then get back with me on that thought, okay?”
