Frozen Cranberry Banana Salad, Maddie’s Fruit Smoothie

Going through my Mother, Ruthie’s, cookbook, I came across my sister’s, Sissy, youngest daughter’s, Maddie, Fruit Smoothie recipe she’d left for Mom and Dad.

Maddie according to her recipe was 11 years old and left this dated 3/26/06. Maddie’s now in 11th grade, and her older sister, Jaycee, is a freshman at, of all places…Auburn! This being hard for her Uncle Dub to swaller, as he’s a Florida Gator fan.

I’m still recovering from this act of family treason! With all the different colleges to go to across this great Country of ours, why, if she wasn’t going to attend Florida, did she have to choose another SEC school? SEC standing for South Eastern Conference, which means, she’s simply going to one of the Gator’s rivalry schools. Spite…pure spite! Luv ya’, Jaycee, just don’t bring no dern “War Eagle” paraphernalia around here…okay?

Maddie’s Fruit Smoothie:

  • 1 cup blueberries
  • 1 handful grapes
  • ½ cup orange juice
  • ½ cup cranberry juice
  • ½ an apple

Blend together, then pulse. (Please help Uncle Dub out Maddie…what’s pulse)

“ENJOY, GOOD ENERGY,” Maddie says!

Frozen Cranberry Banana Salad:

  • 1 can (20 oz.) pineapple tidbits
  • 1 can (16 0z.) whole-berry cranberry sauce
  • 1 carton (12 oz.) cool whip, thawed
  • ½ cup sugar
  • 5 medium bananas, halved lengthwise and sliced

Drain pineapple juice into a medium bowl. Set pineapple aside. Add bananas to the juice. In a large bowl, combine cranberry sauce and sugar.
Remove bananas, discarding juice, and add to cranberry mixture.
Stir in pineapple, and whipped topping.
Pour into a 13”x9”x2” dish. Freeze until solid.
Remove 15 minutes before cutting.
12-16 servings
