		<description>WONDERFUL green tomato pickles recipe from my mom.  A little time consuming but well worth the results.  I also use this recipe for squash and cucumber pickles.  They are very good also but to me nothing beats green tomatoes.

10# sliced green tomatoes - 5 # sugar+ 4 cups
 7#  sliced green tomatoes - 5# sugar + 1  1/2 cups
LIME WATER
3 cups lime
2 gallons water
SYRUP
sugar                                            1tsp whole cloves (heaping)
2 qts. vinegar                              1 tsp allspice
1 cinnamon stick                         1 Mace or nutmeg
1 tsp Celery seeds                       1 tsp ginger
1 - Soak tomatoes in the lime water for about 24 hrs.  Remove from lime water and soak in clear water 4 hours.  change the water hourly.
2 - soak overnight in syrup
3 - Boil 45 minutes put in hot jars and seal.  Turn upside down to cool
Makes 10 - 12 pints

You know honestly, we&#039;ve never let them sit for any length of time. A week, two weeks, a month, just whenever we ran out, we&#039;d open the next jar. I know that there are recipes that call for this, &quot;a sit period,&quot; but these aren&#039;t. This, plus the fact my bunch has never been one to let ANY type of food product have too much of a break period. That&#039;s why we got it...to eat it, not look at it! LOL!
