		<description>SQUASH! Yeah! Bring &#039;em on! This old Georgia gal can eat them anytime, any way! You know, the so-called &quot;experts&quot; tell you the more brilliant colors of veggies are the ones that are best for you. I guess squash, beets, sweet &#039;taters, etc., would be high on the &quot;good fer ya&quot; list! I like squash best I think just fried up in some bacon grease with a dab of onion cut up in them. I must tell you, though, that simply baking (or I guess some would say &quot;roasting&quot;) fresh veggies is not bad at all. I sprayed a baking sheet with Pam, put on two good-sized squash cut in half longways, a handful of asparagus I had just clipped out of the garden, a few fresh green beans, and even a half of an onion and one bell pepper cut in half on the pan. Brushed them all with olive oil, sprinkled them with a little sea salt and some fresh ground pepper, stuck them in a 375 degree oven for about 15 minutes, and I was in Heaven! Actually, I heated up a couple of left-over sausage patties and ate with the veggies. Healthy and good. No, this was not my original idea. My doctor told me that his wife had started doing veggies that way for the sake of their health and he loved them. She even did beets still in the skin that way and he said they were great! He said the skin would pop right off, but then he put fresh butter on them. Gonna do that (roast my veggies) more often. Well, that is, except for my greens, peas, butter beans, and Fordhook limas! C&#039;mon, Deb, roast a squash and try it. If you don&#039;t like it, nothing ventured, nothing gained, and also I&#039;ll bet nothing WASTED, as ol&#039; Dub will probably take care of that end of it!</description>
