		<description>We have canned squash for many years but neither of us like stewed squash so.........I make squash fritters out of them after they are canned.
I drain the jar and add White Lilly buttermilk cornbread mix (or equal amounts of flour and cornmeal) along with an chopped onion, egg, salt and pepper.  There is plenty of liquid in the squash so you rarely have to add any more liquid.  I pat them out into a flat patty and fry them in small amount of oil.  Many times we have them as our bread for a wonderful meal of veggies when the garden starts coming in.  My squash are really jumping after the nice rain we had Tuesday.</description>
