Re: Bourbon Pecan Cake. At our house it's called McNamara Nut Cake. Been in the family for way over a 100 years. In other families it is know as Kentucky Bourbon Nut Cake.
Made lovingly at Thanksgiving. Our recipe calls for a fifth of bourbon(that's gotta be best bourbon). A couple of pounds raisins are soaked in bourbon overnight. Pound of flour, pound of sugar, pound of butter, quart of pecans and lots of eggs of course.
Making this cake is still an event here in the fall in the deep south.
A FIFTH OF BOURBON you say!!? Yep in the cake, in the raisins and when the cake is done and cooled, wrap in cheese cloth and wet with more bourbon. Put in a cake tin, seal it up and wait for Christmas. Makes a lot so smaller ones are made and sent to our elderly members who are to old to light an oven any more. By the way after making this recipe not much bourbon left for the cook and her helpers.
I will try to remember to post on your 2012 Holiday list for all to make and all to enjoy. Always a pleasure to see what you guys have on your minds on a daily basis.
